he owners of Za spend a couple of days a week checking out the produce at the famers’ markets in Arlington and Somerville for the fresh, locally grown ingredients that will end up in your salad or on top of your gourmet pizza. Not only can you mix and match your toppings, but Za has some secret selections only its regulars know about (mac ‘n’ cheese pizza, anyone?). Your server will gladly fill you in. Another secret: Za doesn’t take reservations, but you can call ahead and put your name on the wait list (and, trust us, on a busy Saturday night you’ll want to). There are also great desserts like goat-cheese-and-chocolate cheesecake, and a decent selection of beer and wine. Goldberg

Za is owned by the same couple that owns EVOO, which stands for extra-virgin olive oil. The restaurants share a space in Kendall Square.
