he first retail venture of a successful specialty coffee wholesale company, Cafénation harbors two secrets. The first is its coffee—not surprising, considering the parent company’s expertise in coffee and espresso. The second is harder to guess. It’s the crepes, the unlikely specialty of this mellow shop, with live jazz and original art on the walls. The café offers breakfast, sweet, and savory (including barbecued chicken) crepes, all made slowly in house from a traditional French recipe using buckwheat or pastry flour. Savory crepes were originally made with buckwheat flour because white flour was much more expensive. Sweet crepes made with white flour were enjoyed only by the wealthy.
