I
t’s rare to find a restaurant that specializes in sautés, which is what makes the Purple Onion such a secret—until you get a whiff of the tasty concoctions being cooked up inside. These sautés combine unique ingredients quick-cooked in shallow pans and spilled over rice, and come with either chicken or shrimp, in wraps or bowls. However you choose to have it served, it’s a dish you won’t find in many other places. The black bean and lime sauté is the pride and glory of this tucked-away café (it’s on Newburyport’s historic Inn Street, which isn’t actually a street; it’s a pedestrian pathway in the heart of downtown), but the Onion also serves much more than sautés, including panini and unusual soups. Try the sweet-and-sour tomato. Vallejo
Sautéing is a way of cooking thin-sliced ingredients quickly in a shallow pan over high heat.
